Energy Bites

Super easy and fun to make! Use a cookie scoop to stay clean, or enjoy the mess and use your hands! This recipe is designed to be customized with your favorite mix-in ingredients.

Tools:

·       Mixing bowl

·       Large spoon

·       Spatula

·       Cookie dough scoop

·       Wax paper or parchment paper

·       Airtight storage container 

Ingredients:

·       1 ¼ cups rolled oats

·       2 TBSP crunch (chia seeds, flax seeds, hemp seeds, chopped nuts, whatever)

·       ½ cup nut butter of choice

·       ⅓ cup sticky sweetener of choice (sugar free jelly or sugar free syrup)

·       1 tsp pure vanilla extract

·       ¼ tsp salt

·       ½ cup mix-ins of choice (chocolate chips, coconut curls, raisins, etc.)

Instructions:

1.     Wash your hands :)

2.     Place all ingredients into the mixing bowl.  If you want to add spices like cinnamon or nutmeg, add them now too (about ¼ tsp) . 

3.     Stir to combine.  Use the spoon and spatula to get everything incorporated evenly. It should look and act like play dough.

NOTE: if it’s too sticky, add more oats. If it’s too dry, add more nut butter.

4.     Cover and refrigerate for 30 minutes.  This helps make it easier to roll them!

5.     Remove from the refrigerator and portion into balls on the wax or parchment paper. 

These treats can be stored in an airtight container in the refrigerator for up to 2 weeks, or frozen for 3 month

 

NOTE

If using full sugar sweetener in this recipe, double the carb count to 24g per 2 tablespoon serving instead of 12 g of carb per 2 tablespoons
